These banana pancakes are super quick to make, wonderfully fluffy, and perfect for a leisurely breakfast or a sweet snack. Best of all: they're vegan and contain absolutely no refined sugar!
📝 Ingredients (for approx. 2 servings):

1 ripe banana 🍌

120 ml plant-based milk (e.g., oat, soy, or almond milk) 🥛

80 g flour (wheat or spelt)
-
20g peanut flour (for extra nutty flavor) 🥜
-
1 tsp baking powder
-
1 tsp agave syrup (optional, for mild sweetness)
-
½ tsp cinnamon
-
1 pinch of salt 🧂

A little oil for frying
🥣 Preparation:

Mix the dough base:
Mash half the banana in a bowl with a fork. Add plant-based milk, peanut flour, agave syrup, and cinnamon, and mix well. -
Mix the dry ingredients:
In a separate bowl, mix flour, baking powder and salt. -
Mix everything together:
Add the dry ingredients to the banana mixture and stir to form a smooth batter. -
Add banana:
Cut the second banana half into pieces and dip them in the batter. -
Fry pancakes:
Heat a pan with a little oil over medium heat. Add the banana pieces along with the batter and cook the pancakes for about 2–3 minutes , until bubbles appear on the surface. Flip and cook for another 2 minutes until golden brown. -
Serve & enjoy:
Serve with your favorite toppings – e.g. berries, nut butter or our bites 😋 .
