These truffles are crunchy, creamy & chocolatey – and all without baking! 😋🍫
With just a few ingredients, you can conjure up the perfect snack for in between meals or as a sweet meal prep idea in no time.
📝 Ingredients (for approx. 10–12 balls):
2-3 rice cakes 🍘
2-3 tablespoons peanut butter 🥜
1-2 tbsp coconut blossom syrup or honey 🍯
80g dark or vegan chocolate (melted) 🍫
🥣 Preparation:
Mix the base:
Mix peanut butter and coconut blossom syrup well in a bowl.
Add some crunch:
Crumble the rice cakes with your hands and fold them into the mixture – mix everything well until a malleable consistency is achieved.
Form into balls:
Roll the mixture into small balls and place them on a plate or board.
Chocolate Time:
Coat the truffles with melted chocolate (either dip them with a fork or spoon the chocolate over them).
Chill & enjoy:
Place the balls in the refrigerator until the chocolate is firm – then snack immediately or store in a tin (keep cool).
🌱 Tip:
Refine the mixture with cinnamon, vanilla or a pinch of salt – or roll the finished truffles in cocoa powder, desiccated coconut or chopped nuts 😍
