These frozen banana and raspberry bites are wonderfully creamy, fruity, and sweet. You only need a few ingredients, and the freezer does the rest. Ideal as a summer snack or a quick dessert straight from the freezer 🍨✨
📝 Ingredients (for approx. 12 small bites):
1 ripe banana 🍌
a handful of raspberries (fresh or frozen) 🍓
2–3 tbsp pistachio butter (alternatively: almond or cashew butter) 🟢
80g white chocolate
1 tsp coconut oil (optional, for melting) 🥥
small silicone muffin tin or a rectangular tin lined with baking paper
🥣 Preparation:
Prepare the fruit:
Slice the banana into thin slices. If necessary, gently press the raspberries so they spread more easily.
Layers:
Press 1-2 banana slices and a few raspberries into the mold so that the base is nicely covered with colorful and fruity fruit.
Pistachio butter on top:
Add a dollop of pistachio butter to each portion of fruit – this will later become the creamy center 💚
Melting white chocolate:
Gently melt the chocolate (with the coconut oil) in a water bath or in the microwave.
Top and freeze:
Pour the melted chocolate over everything so that the bites are sealed on top. Then place them directly into the freezer – for at least 2 hours or overnight.
Take it out & enjoy:
Let it thaw briefly, then enjoy it straight away – perfectly refreshing and simply so good!
🌱 Tip:
You can also top the bites with chopped pistachios or coconut chips before the chocolate sets – for extra crunch! 😍
